Zucchini Spaghetti Casserole Recipe
Melt butter in a large skillet over medium heat.
Zucchini spaghetti casserole recipe. Preheat oven to 350 degrees f 175 degrees c. Pour spaghetti into a casserole dish. Add olive oil and onions and cook for 3 4 minutes.
Slice the zucchini into thinner strips resembling spaghetti. Turn zucchini over and continue peeling until all the zucchini is in long strips. Cook for 2 3 minutes.
Sprinkle with parmesan cheese if desired. Remove from the heat. Cook and stir until sauce is warmed through about 2 minutes.
Put in 13 x 9 pan cover and bake 350 for 35 minutes and than add rest of cheese and bake uncover for 10 more. This was a family favorite when i was a kid and now i m serving to my family. Heat through than stir in cottage cheese and zucchini and add 1 1 2 cups of mozzarella cheese.
Cook and stir bell pepper and onion in hot butter until slightly tender about 4 minutes. Mix tomato sauce tomatoes salt basil oregano garlic powder onion powder thyme and red pepper flakes into ground beef. Snip zucchini noodles with scissors here and there to keep them from tangling too much.
Pour into a greased 1 qt. Saute onion and pepper than add to sauce tomatoes mushrooms and seasonings. Cover pan with aluminum foil.
