Recipe For Brussel Sprout Latkes
Add brussels sprouts to the food processor and grate.
Recipe for brussel sprout latkes. This recipe is from my mother. Stir in the eggs egg white flour salt and pepper and mix until fully combined. Flip and fry the other side for 3 more minutes.
Place the shredded potatoes and onion in a bowl and cover in water. Whisk together the egg whites and lemon juice in a large bowl. Set aside in large bowl.
Working in batches scoop cup of the brussels sprouts mixture into the hot oil. Fry until golden brown on each side. Using a small pan will allow for a deeper layer of oil.
Use a spatula to flatten slightly. In a small bowl stir together potato starch baking powder 1 1 2 teaspoons salt and 1 2 teaspoon pepper. Cut the stems off the brussels sprouts and cut each sprout in half.
With a small ice cream scooper ladle latkes about 2 tablespoons each onto baking sheet about an inch apart. Shred peeled potatoes with a cheese grater or shred in a food processor. Gently flatten them with a spatula.
Soak for 20 minutes. On the large holes of a box grater grate potatoes onion and brussels sprouts. Using an ice cream scoop or a large spoon place dollops of the mixture in the oil.
