Mix with a hand mixer until well blended and creamy.
All recipes twice baked sweet potatoes. Set aside until cool enough to handle. Cut off top 1 3 of potato and scoop out flesh leaving 1 4 inch in shell. Stop machine add butter then process until potatoes are silky smooth.
Mash with a potato masher. Place in a shallow dish cover loosely and refrigerate. Puree scooped out flesh along with salt and pepper until smooth.
Scoop out sweet potato flesh from both the top and bottom halves leaving at least 1 4 inch flesh in the bottoms to make the shells. With machine motor running gradually add both milks through feeder tube. To the potato flesh add sour cream milk butter salt pepper 1 2 cup cheese and 1 2 the green onions.
Preheat oven to 350 degrees f 175 degrees c. Twice baked stuffed sweet potatoes can be made up to a day ahead. Place sweet potatoes back onto the baking sheet.
Mix potato with butter cream 2 tbsp brown sugar nutmeg salt and pepper and spoon back into reserved potato shells. Place pulp into a blender or food processor and blend until smooth. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour or until soft.
Cut potatoes in half lengthwise and scoop out pulp leaving a thin shell. Preheat oven to 375 degrees f 190 degrees c. Remove from the refrigerator 30 minutes before baking as directed in the recipe.
