Recipe Zucchini Haloumi Fritters
Rouchly chop halloumi and add to bowl.
Recipe zucchini haloumi fritters. Over high heat add the patties in batches and pan fry for approximately 3 4 minutes on each side or until a golden colour. Fry the fritters in batches for 2 3 minutes each side or until golden brown. Place milk and egg yolk in a small jug and mix until well combined.
Cook for 3 4 minutes each side until golden and crispy. Combine zucchini halloumi onions and mint in a large bowl. Chop corn kernals off the cob.
Drain the fritters on absorbent paper. Set aside for 10 minutes to drain. Combine the zucchini with the spring onion haloumi flour eggs and dill.
Place zucchini into basket and squeeze excess liquid. Combine zucchini and teaspoon salt in a colander set over a bowl. Sift the flour cornflour baking powder and cumin into a large bowl.
Combine flour and baking powder in a bowl and add to vegetable mixture. Season well with salt and freshly ground black pepper. You will need about three cups of zucchini after salting.
Make a well in the centre of flour mixture and pour in egg mixture. Heat 1 2cm of oil in a non stick frypan over medium heat. Place a tablespoon or so of the fritter mixture in the pan and flatten with the back of the spatula.
