Recipe Vegetarian Split Pea Soup
Place first 5 ingredients in a large pot.
Recipe vegetarian split pea soup. Add salt and pepper. Add the peas and veggie broth stir well and bring to a rolling boil. Add the diced potatoes oregano and thyme and mix.
Cover and simmer until peas are tender about 1 hour stirring occasionally. Heat oil in a large dutch oven or heavy bottomed pot over medium high heat. Add onion potato carrots and celery.
If you aren t looking for a vegetarian split pea soup you can add some ham to this and also use chicken broth instead of vegetable broth. Simmer 10 minutes longer. Warm the olive oil in a large stock pot over medium high heat.
Add onions garlic celery carrots and potato. You can saute these first or add them in directly if you want a fat free soup. Cook stirring constantly until fragrant about 1 minute.
Add the peas barley salt and water. Cook stirring occasionally until the vegetables start to soften about 6 minutes. Bring to a boil reduce heat to low and simmer partially covered for about 20 minutes stirring occasionally to prevent split peas from sticking to bottom of pot.
In a large pot over medium high heat saute the oil onion bay leaf and garlic for 5 minutes or until onions are translucent. Either add chopped cooked ham for the last hours of simmering or if you prefer to add a ham hock or other smoked or cured piece of ham add that when you. Simmer for 2 hours stirring occasionally.
