Preheat oven to 400 and grease a casserole pan with nonstick cooking spray and set aside. Melt butter in a large skillet. Add squash and onion and saute until squash starts to get tender.
While pasta is cooking preheat large ceramic non stick skillet on medium high heat and swirl 1 tbsp of oil to coat. Preheat oven to 350 degrees f 175 degrees c. Stir in the bread crumbs salt and pepper.
In the prepared casserole dish mix the pasta with the vegetable mixture and mozzarella cheese. Continue to cook and stir until the zucchini is tender. Sprinkle with parmesan cheese if desired.
