Recipes Chicken Breast Peppers
Chicken is cooked when pale and surrounded by clear juices.
Recipes chicken breast peppers. Heat remaining oil in the skillet over medium heat and stir in the red bell pepper yellow bell pepper orange bell pepper and onion. Heat oil in a large skillet over medium high heat. Simmer simmer covered till the sauce thickens about 15 minutes.
Saute garlic until fragrant about 30 seconds. Cook 10 minutes or until golden brown stirring occasionally. Add 2 remaining tablespoons of oil to the skillet and cook peppers and onions stirring often until just softened.
Reduce heat and simmer until slightly thickened about 4 minutes. Reduce heat to medium. Add parsley oregano and olives.
Mix in the garlic and cook and stir about 1 minute. Then remove the cover and bake for 5 minutes longer watching carefully so you do not burn the vegetables. Add onion and saute for a few minutes stirring occasionally.
Cook about 5 minutes until tender. Return the chicken to the skillet. Cook and stir 2 minutes or until thickened.
Add broth vinegar and sugar. Season chicken with salt and pepper. Add a little water if the tomatoes are not juicy.
