Recipe Vegetarian Noodle Soup

Recipe vegetarian noodle soup. Ladle soup into bowls over the vegetables and noodles and garnish with spring onions. Add the garlic and onion powders partially cover with a lid and cook on low flame for 45 minutes until all the vegetables have softened and the broth has reduced a couple of inches. Classic chicken noodle soup is made vegan by simply replacing the chicken with healthy hearty potatoes. Fish out the bay leaves thyme sprigs onion and garlic cloves and discard. Heat the olive oil in a medium saucepan over medium heat.

Heat the remaining 1 tablespoon of olive oil in a large soup pot over medium high heat. Add the garlic onion carrots and celery and sauté for 10 minutes or so just until the onions start to take on a bit of color. Add mushrooms frozen vegetables green onion ginger and soy sauce.
