Place a wok or large non stick frying pan on a medium high heat with the vegetable oil. Stir fry for about 4 minutes or until softened and lightly browned. Return the chicken and its juices to the wok and stir in the cornflour mixture.
Step 2 heat 1 tablespoon vegetable oil in a large skillet or wok over medium high heat. Mix chicken soy sauce sherry and cornstarch in a bowl. Serve immediately over hot rice if desired.
Cook and stir broccoli bell pepper zucchini and garlic for 2 to 3 minutes. Once the vegetables are well combined with the flavored oil and stir fry sauce return the cooked chicken and garlic to the wok.
