Recipe Zucchini Beef Casserole
This is a low carb baked zucchini casserole with ground beef sauce i used 97 fat free ground beef but you can use ground turkey as well the meat sauce is what lends this hearty zucchini casserole all the warmth and flavor.
Recipe zucchini beef casserole. Add tomatoes rice worcestershire sauce salt and pepper. Turn the heat down to medium low add the cream cheese and then sour cream. Cover and microwave on high for 15 20 minutes or until vegetables and rice are tender stirring twice.
Heat 1 2 minutes longer or until no longer pink. Cover and simmer in low heat for another 10 minutes until flavors blend. Stir gently to combine.
Cook until rice is tender. Add 1 cup cheddar cheese. Add the zucchini and broth to the pan and cook until the zucchini is soft about 5 more minutes.
Cook over medium heat for about 10 minutes or until meat is well cooked. Add the cooked rice and press it snuggly down. In the bottom of a 9 x 9 baking dish drizzle about 1 tablespoon of oil.
