Recipe Yellow Squash Casserole Sour Cream
In a large bowl whisk together eggs sour cream and mayonnaise.

Spoon the squash mixture into the prepared baking dish. Melt remaining 1 2 cup butter and stir it into the stuffing mix. Lower the heat and simmer covered for 3 to 5 minutes or until squash is crisp tender.
Press firmly against the mixture until. Drain and add butter cheddar cheese sour cream onion parmesan cheese and wine. Stir in cheddar and parmesan and season mixture with salt and pepper.
Stir in sour cream grated carrot and cream of chicken soup. Once the butter is melted add in the squash onions. In a medium bowl mix together cracker crumbs and cheese.
In a large saucepan bring 1 2 inch of water to a boil over high heat. Pour the squash and onion into a colander and drain. Arrange vegetables over top reserving 3 4 cup carrot and 2 cups squash for top layer.
Mix until well combined then sprinkle in the salt peppers. Spread remaining stuffing mixture over vegetables. Drain the squash and onions.
