Black Bean Quesadilla Recipe
Heat 1 teaspoon oil in a large nonstick skillet over medium heat.
Black bean quesadilla recipe. Place five tortillas on ungreased baking sheets. Add 2 quesadillas and cook turning once until golden on both sides 2 to 4 minutes total. Repeat with the remaining 1 teaspoon oil and quesadillas.
Spread with bean mixture. Melt 2 teaspoons of the butter in a large skillet over medium heat. Top with the remaining tortillas.
Cut each quesadilla into six wedges. Stir in beans and corn then add sugar salsa and pepper flakes. In a large bowl mash beans.
Add 1 cup salsa. Bake at 350 for 15 18 minutes or until crisp and heated through. Cook until heated through about 3 minutes.
Serve with sour cream and remaining salsa.
