Recipe Pippies Xo Sauce

In the same pan heat up the remaining peanut oil and add the pipis xo sauce and oyster sauce. Add soy chicken stock and sugar and simmer for another 2 minutes. Stir for 2 3 minutes until the pipis open.
Remove the pippies as they open and set aside. Drain the pipis and reserve the cooking liquid. Add the stock sugar salt and soy sauce and simmer for 1 minute.
Heat oil in wok over high heat add shallots garlic and ginger and sauté for 2 minutes add black beans xo and shaoxing and simmer for 2 minutes. Add the xo sauce and stock and stir for 1minute. Heat peanut oil in a wok over a high heat then stir fry eschalots for 2 minutes or until softened.
For the pipis in a wok add oil and garlic and bring up to a high heat and stir fry until fragrant or approximately 1 minute. Place the fried vermicelli on the serving plate. Add the pipis coating in the sauce thoroughly.
