Recipe For Zucchini Casserole With Stove Top Stuffing
Cook zucchini in a little salted water until tender.

Cook for 5. Boil zucchini and onion for 5 minutes drain. In a medium bowl combine the soup sour cream and carrots.
Cook zucchini and onion in salted water for 5 minutes. Toss remaining butter and croutons and put on top. Preheat oven to 350 f.
Slice the zucchini and onions. Put zucchini carrot mixture on top of stuffing. Sprinkle the stuffing cubes evenly over the top of the casserole.
Mix in 1 2 of the stuffing mixture then spread into a 9x12 inch casserole dish and sprinkle the remaining stuffing on top. Cover the dish with aluminum foil and bake in preheated oven for 60 minutes. Use half of stuffing to line greased casserole dish.
Spread half of this mixture into the bottom of a 9x13 inch baking dish. Gently fold in zucchini and put in 8 x8 dish. Stir in the zucchini and onion and mix well.
