Add sugar and vanilla extract gradually continuing to beat until soft peaks form. Beat ingredients together with an electric mixer on high speed until cream is thick and billowy and stiff peaks form. Pour cream into the chilled bowl and beat with an electric mixer until frothy.
Place a metal mixing bowl and metal whisk into the freezer for 10 to 15 minutes. The colder the cream the easier. Homemade whipped cream loses some volume over time so you may need to lightly whip it again to achieve the original texture.
Continue whipping for several minutes until the cream is fluffy medium peaks but not too firm. For flavored whipped cream you can add 1 or 2 teaspoons bourbon or whiskey teaspoon ground cinnamon or pumpkin spice blend or teaspoon mint or almond extract. Place a small bowl and mixer beaters in the freezer for about 5 minutes.
