Recipe For Zucchini Boats With Ground Beef
Trim the ends off zucchini.

Lay hollowed out zucchini halves side by side season with some salt and stuff them generously with beef filling. Scoop out pulp leaving 1 2 in. Prepare the zucchini boats.
In a skillet cook beef zucchini pulp onion mushrooms and peppers over medium heat until meat is no longer pink. When cool enough to handle scoop out seeds leaving a 1 4 in. Heat 1 tablespoon of olive oil in a large skillet over medium high heat.
