Add canola oil to pan.

In a pot add the chicken stock garlic chilli and ginger then bring to the boil. Add the udon noodles and cook for a further 4 minutes. Now add carrots and simmer for few minutes.
I wanted a brothy chicken soup but not just plain old chicken noodle. Everything else was followed to the letter. Divide noodles and soup into bowls and sprinkle on the rest of the green onions and shichimi if you like.
