After a bit of chopping you just dump the ingredients in the slow cooker and let it do the work. Butternut squash and lentils make it hearty while herbs and other veggies round out the flavor. Discard bay leaves and peppercorns.
Add the lentils to the slow cooker. Cover and cook on the low setting until the lentils are tender about 8 hours. No need to stir.
We used brown lentils which are readily available everywhere. Remove the bay leaf and stir in the red wine vinegar. Add the garlic and let cook another 2 minutes then pour the onions garlic into the slow cooker.
