Light Vanilla Pudding Recipe
In another bowl beat together the caster sugar and the butter until light and fluffy.

Split vanilla bean lengthwise and scrape out seeds with the tip of a paring knife. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Place the jam on the bottom of the greased pudding basin.
Boil and stir 1 minute. Gradually whisk in milk 1 tablespoon at a time to start until smooth. Spray six 6 ounce custard cups with cooking spray.
Pour into hot milk a little at a time stirring to dissolve. Place over medium heat. Beat the butter and sugar in a mixing bowl until light and fluffy then beat in the eggs one at a time.
Pour a layer of pudding then a layer of ba nanas then pudding. In a medium saucepan off heat whisk together sugar cornstarch egg yolks and salt. In medium saucepan over medium heat heat milk until bubbles form at edges.
