Recipe Ricotta Cheese Gnocchi
It gives the gnocchi light and pillowy texture.
Recipe ricotta cheese gnocchi. Place drained ricotta in a bowl with grated cheese eggs and salt. Add a good sprinkle of flour and start to combine before also adding the pecorino cheese. Ricotta cheese i used regular supermarket ricotta.

The dough should come together within 20 to 30 strokes of your spoon. Add the flour and mix until almost combined. Crack an egg into the middle of the ricotta beat well and mix through.
Add a little extra flour if the dough is too sticky and wet. Mix in 1 cup of flour. Use the remaining flour 1 tbsp at a time to get the dough consistency right.
Don t grate in on the microplane but on the small holes of a box grater. Move the mixture onto a flat surface and form into a compact dough the dough will be soft. It tastes much better as the pre shredded cheese.
Step 1 stir together the ricotta cheese eggs parmesan cheese salt pepper and garlic powder in a large bowl until evenly combined. Then add 3 4 cup of flour and mix until just combined so it is a sticky very soft dough but not like batter. Combine the gnocchi ingredients in a bowl except the flour.
