Recipe Chicken Breast Mozzarella Tomato Basil
Heat a little oil spray in a non stick frying pan.
Recipe chicken breast mozzarella tomato basil. Nestle the chicken breasts down into the tomatoes allowing the tomatoes to gather up the sides of each chicken breast. Add the chicken to the large bowl and turn to coat. Layer the tomato and basil from the balsamic olive oil mixture on top of the mozzarella.
In a large bowl whisk 1 4 cup of the olive oil with the lemon zest lemon juice thyme garlic and a generous pinch each of salt and pepper. Drizzle the balsamic glaze over the chicken and top with basil. Spoon 1 tablespoons of the mixture into a medium bowl add the tomatoes and turn to coat.
Secure pockets with small wooden cocktail sticks. Slash each chicken breast four times with a sharp knife cutting as far as the middle of the breast. Broil for 8 10 minutes or until the cheese is melty and the tomatoes are slightly charred.
Plate the chicken and tomatoes on top of the pasta. Turn the heat to low evenly add the mozzarella to the top of each chicken breast and cover the skillet until the cheese has melted about 1 to 2 minutes. Add the tomatoes then toss with 1 2 a tablespoon of olive oil and a pinch of salt and pepper.
Tip in the cherry tomatoes with the basil and season with salt and pepper. Take each 1 2 inch circle and cut in half. Heat the olive oil in a large frying pan over a medium heat and gently fry the garlic and the chicken for 2 minutes on each side until golden all over.
Place two pieces in the opening of the chicken breast. Steps 1 2 and 3 use toothpicks to keep the mozzarella tomato and basil in place. Stuff pockets with tomato slices basil and mozzarella.
